Ingredients:
Eggs 10 oz
Sugar 1.11 lb
Salt 0.27 fl oz
Vanilla 0.27 fl oz
Grated orange zest 0.1 oz
Pastry flour 1.78 lb
Baking powder 0.7 oz
Blanched whole almonds 10 oz
Mixing:
1. Combine the eggs, sugar, and salt. Stir over hot water to warm the mixture. Whip until thick and light.
2. Fold in the vanilla and orange zest. 3. Sift together the flour and baking powder. Fold in the egg mixture.
4. Mix in the almonds.
5. Shape into logs about 2-2.5 in. (6 cm) thick.
Baking:
Bake at 275°F (135°C) until toasted and golden brown, about 30 minutes.
Finishing:
Let cool slightly. Slice diagonally about 1/2 inch (12 mm) thick. Place cut side down on sheet pans.
Yum, and doesn't look too hard to make.
