Farmer’s Market Pasta Salad

Ingredients for pasta salad:
2 cups pasta
1 cup broccoli
1 cup cauliflower
1 cup diced green tomatoes
2 radish, shredded
2 cups cottage cheese
1/2 cup of curry dressing
Ingredients for dressing:
2 tablespoons white wine vinegar
1 tablespoon curry powder
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
Directions:
Combine pasta and veggies in a large bowl, add cottage cheese. In a blender combine the white wine, curry powder, honey, salt, and pepper and blend to combine. With the machine running add the olive oil. Pour the dressing over the pasta, veggies and cottage cheese. Toss to combine and serve immediately.
