Pumpkin Pie Soup

Ingredients:

2 cups apple cider or apple juice

2 cups chicken broth

16 ounces pumpkin puree

1/2 cup brown sugar (you may need slightly more or less depending on taste preference)

1 tablespoon cinnamon

1/2 teaspoon clove

1/2 teaspoon nutmeg

1/2 teaspoon allspice

2 cups whole milk


Directions:

1. In large pot on LOW HEAT, combine all ingredients EXCEPT milk; while stirring frequently, bring to simmer.

2. Allow to simmer for 10 minutes, stirring occasionally.

3. Stir in milk and return to simmer; serve. (Soup can also be chilled and served cold)


Great way to beat the cold!
